Well our menu was a little hard to stick to last week. We really had to just stick to the plan and be determined. Saturday’s pizza didn’t happen. Unfortunately, I hadn’t saved the recipe to my hard drive and Real Mom Kitchen was having some website troubles, so I had no recipe. (Her site is back up and I’ve saved the recipe to my hard drive.) We had Chicken Tortilla soup on this coming week’s menu for hubby to take for lunch and he had leftover chili from this week’s lunches – so we had soup for dinner. We did get some subs from Subway to add to the soup.

I’m finding that we have lots of leftovers from all of our homemade meals. I’ve been eating leftovers for lunch and not having to make something new. We have 2 loaves of artisan bread left from when we made it on Sunday, so one is wrapped and ready to use for a meal this week and one is in the freezer.

Here’s what’s on our menu for this week:

Lunch – Toddler: Macaroni and Cheese, Applesauce
Me: Macaroni and Cheese

Dinner – Tacos

Lunch – Toddler: Whole grain pita with cheese, banana
Me: Peanut butter, banana, strawberry, granola on flat out bread
