Well it’s about time that I seriously menu planned. We shop for 2 weeks at a time (that’s the way pay day rolls) and have been for a long time. We make a menu before we make out our shopping list. We just never actually made the menu include breakfast and lunch. We also never really looked at the days to see what was planned. So, what happened was that we would be running around all evening for kids activities or something and then it would be too late to cook something. We’d end up eating fast food.

This needs to stop. As part of my goal to focus on my health, I’m trying to make healthier choices. I am horrible about feeding myself. A lot of times, I just don’t eat lunch. I’m to tired, too busy or whatever to think about what to make and then make it. I end up eating junk later in the afternoon. I’m hoping by planning healthy lunches that I will eat them, and in the end eat healthier food with more nutrition.  Although, I must warn you, I tend to eat the same thing every day. I hate to buy fresh produce and not eat it up before it goes  bad.

I struggle a little with ideas for Baby E (2 years old, I should probably stop calling him Baby). So, I’m including his lunches. If you have any ideas to share, I’d love some – please comment.

Here’s our Menu for this week:

Monday

Lunch – Toddler: Chicken nuggets, carrots, applesauce
Me: Peanut butter, banana, strawberry, granola on flat out bread (I’m just taking
out the jam from the recipe)

Dinner – Chicken tortilla soup, side salad, baguette

Tuesday

Lunch – Toddler: Whole grain pita, sliced banana, carrots
Me: Leftover soup

Dinner – Greek Inspired Slow Cooker Chicken, green beans

Wednesday

Lunch – Toddler: Grilled cheese sandwich, applesauce
Me: Peanut butter, banana, strawberry, granola on flat out bread

Dinner – Pasties, salad, veggies, pie at church

Thursday

Lunch – Toddler: Corn, red pepper, applesauce
Me: Leftover chicken from Tuesday

Dinner – Spaghetti, side salad

Friday

Lunch – Toddler: Whole grain pita, sliced banana, carrots
Me: Peanut butter, banana, strawberry, granola on flat out bread

Dinner – Homemade Pizza

Saturday

Lunch – Leftovers or sandwiches

Dinner – At Geema and Beempa’s house

Sunday

Brunch – Overnight French Toast (we’re making ours with Butter Pecan creamer this time)

Dinner –  Cheddar chicken, veggies, quinoa
