It’s been a while since I posted a dinner recipe. I’ve been lucky and hubby has been doing most of the cooking. 🙂 Track season is starting soon (hubby coaches middle school track) so I’ll be back trying out new recipes. I gotta keep adding to my stash!
I found this recipe in Taste of Home’s The Busy Family Cookbook. It’s really tasty. Even G, my picky eater, ate all of his chicken without a fuss. Citrus, honey and garlic – what’s not to like? I love how quickly this dish is ready for the table.
Honey Garlic Chicken
4 boneless skinless chicken breast halves (4 oz each)
2 Tbsp Honey
2 Tbsp Orange Juice or Lemon Juice
1 Tbsp Vegetable Oil
Dash Pepper
1 to 2 Garlic Cloves, minced
Preheat oven to 400 degrees F.
Place chicken in a greased 13x9x2 baking pan. In a small bowl, combine the remaining ingredients; pour over chicken. Bake, uncovered, at 400 degrees for 15 minutes. Broil 4-6 inches from the heat for 5-7 minutes or until juices run clear, brushing occasionally with sauce.
Modifications:
I needed 5 pieces of chicken, so I increased the honey and orange juice to 3 tbsp and the vegetable oil to 1 1/2 tbsp. I also used 4 cloves of garlic – I love garlic! I like to season the chicken before anything else goes on it, so I sprinkled a little salt and pepper on each side before pouring the sauce on top.

Oh, that looks simple & tasty! Have you tried it on the grill? I think I’ll put it on the menu for next week!

I just want to clarify – I put the chicken in for that and it came out totally raw. Did you mean bake it for 35? Or 45?
Oh no! Knowing how I worry about fully cooking chicken, I may have cooked it closer to 20 minutes – I can’t live without my meat thermometer. I used a metal 9×13 baking pan and my chicken breasts were not super thick. I just double checked the recipe in the book and it says 15 minutes at 400 degrees.
Did you slice your chicken breasts thin or leave them whole? I find it really hard to cook them through unless I slice them all to the same evenness. It should only take 20 minutes at 400.
