It’s been so cold and busy lately that a slow cooker meal was just what we needed. I recently found another blog to read. (I know if I have so much time to read blogs, why do I complain about no time for cleaning? Because we need to eat???) Anyway, A Busy Mom’s Crock Pot Cooking Adventures was a great find. I wanted more crockpot recipes and she delivers.
This was so yummy! Even G ate everything on his plate. He did need some convincing, but after we explained that there were apples in there he gave it a try. We served it up with some Whole Grain Penne Pasta and it was so yummy. I already said that, didn’t I?
Golden Mushroom Pork and Apples
2 cans Campbell’s Condensed Golden Mushroom Soup
1/2 cup water
1 Tbsp. brown sugar
1 Tbsp. Worcestershire sauce
1 tsp. crushed dried thyme leaves
4 large Granny Smith Apples (peeled and sliced – about 4 cups)
2 large Onions (sliced-about 2 cups)
8 boneless pork chops (about 2 lbs)
In the slow cooker, mix soup, water, brown sugar, Worcestershire and thyme. Add apples, onions and pork. Toss together. Cook on low 8-9 hours or until tender.
Modifications:
Since this was the first time I tried this recipe, I didn’t change a thing. You don’t really need to because the recipe is great as is. Next time, I might play with it a little bit and add a couple of cloves of minced garlic (because I love garlic). The hubs thought that adding a wee bit of cinnamon and/or nutmeg might also be tasty. He didn’t say “wee bit” though, that was me.
