With the holidays soon approaching, I figured that I’d share some tasty, yet easy recipes for any meal.

You can have breakfast for dinner – it’s one of our favorites.  This is so good.  In fact, I brought it to my MOPS meeting last Friday for brunch and won “best dish.”  Thank you ladies!  There were no leftovers. And, yet again, I forgot to take a photo.

Christmas Morning Frittata

1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
2 tablespoons butter or margarine
1/2 cup chopped tomatoes
1/4 cup minced fresh parsley
5 eggs, lightly beaten
2 cups shredded mozzarella cheese
1/2 cup soft bread crumbs
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper

In a skillet, saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside. In a large bowl, combine the remaining ingredients. Stir in reserved vegetables.

Pour into an ungreased 9-in. pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

Modifications

I used olive oil to saute the vegetables instead of butter.  I didn’t have any fresh tomato but I used the canned diced tomato with garlic and olive oil.  I drained out the liquid and measured out the tomatoes.  I also didn’t have fresh parsley, but I used a similar amount of Litehouse Freeze-dried Parsley (great stuff if you haven’t tried it yet).  For some reason, I felt that I needed to add another egg (I thought I read that in the reviews, but when I checked back couldn’t find it).  I have no idea what soft breadcrumbs means, so I used plain breadcrumbs (you know, the ones you buy in the canister).  Since everything turned out awesome, I’ll be fixing it again for sure, and I’ll use my same modifications.  Why mess with success?

I prepared everything the night before and refrigerated overnight.  I let it sit out while the oven heated to temperature and only had to cook it an additional 5 minutes.  Even more awesome!  This dish is simple and makes for an easy morning!
