Ahhh! Soup… I really love soup. Okay, so I don’t like all those veggie soups. I, of course, like the ones with all the fat and calories – the creamy soups and the cheesy soups. Yum!
We have a great Cheese Tortilla Soup recipe, but it’s not mine to share. Maybe my hubby, the Food Good guy, will post it on his blog some day. I found this great cheesy soup on All Recipes and it was yummy!
Cheeseburger Soup
1/2 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup chopped celery
1 teaspoon dried basil
1 teaspoon dried parsley
4 tablespoons butter
3 cups chicken broth
4 cups cubed potatoes
1/4 cup all-purpose flour
2 cups cubed Cheddar cheese
1 1/2 cups milk
1/4 cup sour cream
In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.
I didn’t make any modifications to the recipe because I’ve only tried it once. I think next time I’ll add more ground beef. I just think it could use some more meat. Maybe, just maybe (probably after I consult with the wise hubby) I’ll consider adding some dry mustard. I think it would add some “tart.”
Okay, the G Report. He didn’t even try it. I knew that it would look too scary for him and that it would be a battle. I made him chicken nuggets. My daughter on the other hand loved it and had seconds. She’s our gourmet – she loves food.
It was a wonderful soup to have on a cooler day. I think I’ll love it in the winter with some crusty bread – yum!
