Yum! I was looking for a brunch recipe several months ago and found this on All Recipes. It’s really cheesy and wonderful comfort food. My mom liked it so much that she asked for the recipe and she makes it as a side dish for dinner. So versatile! So, whether you want this for breakfast or dinner, it’s up to you.
Cheesy Hash Brown Bake
1 (30 oz.) package of frozen shredded hash brown potatoes, thawed
2 (10.75 oz.) cans condensed cream of potato soup, undiluted
2 cups sour cream
2 cups shredded Cheddar cheese, divided
1 cup grated Parmesan cheese
In a bowl, combine the potatoes, soup, sour cream, 1 3/4 cups of shredded cheese and Parmesan cheese. Transfer to a greased 3 quart baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350 degrees F for 40-45 minutes or until bubbly and cheese is melted. Let stand for 5 minutes before serving.
I like to prepare everything the night before (for breakfast) and then bake it in the morning. I have also found that everything gets equally bubbly by using a 9×13 pan. My 3 quart baking dishes are deep and it seemed like the center was much cooler than the rest. So, I just like the 9×13 pan better. Also, one time when I was gathering the ingredients and found that the Food Good guy had used some of them, I substituted mozzarella for the cheddar and everything still worked out yummy!
